- 3 eggs, medium
- 2 tbsp Heraclea Chili Infused Olive Oil
- 4 green onions, finely chopped
- ¼ cup chopped flat-leaf parsley
- ¼ cup chopped dill
- ¼ cup chopped basil
- ¼ cup chopped mint
- 2.5 ounces shredded mozzarella cheese
- 2.5 ounces shredded Parmesan cheese
- 2.5 ounces shredded Jarlsberg cheese
- 1 tsp salt
- 1 tsp ground black pepper
- 4-6 thick slices of sourdough bread
Steps
- In a large bowl, whisk together the eggs and olive oil until well combined.
- Gently fold in the chopped herbs, followed by the three cheeses, mixing until evenly incorporated.
- Arrange the sourdough slices on a parchment-lined baking sheet.
- Spoon a generous amount of the egg and herb mixture onto each slice, spreading it to the edges.
- Bake at 375°F (190°C) for 20 minutes, or until the tops are golden and set.
