Ingredients
- 3 oz London dry gin
- 1/4 oz Heraclea Rosemary Infused Extra Virgin Olive Oil
- 1 oz freshly squeezed orange juice
- 1 oz freshly squeezed lemon juice
- 1 egg white or aquafaba (optional)
- Honey syrup: 2 oz honey, 2 oz hot water, pinch of ground cinnamon
- Garnish: rosemary spring
Steps
- Honey Syrup: In a small saucepan, heat the honey, water and cinnamon over medium heat until smooth.
- Remove from heat and let cool.
- If using egg white or aquafaba, combine all ingredients (including the cooled honey syrup) to a cocktail shaker with no ice and shake until a froth has formed.
- Add ice to the cocktail shaker and shake until chilled.
- Strain into a small cocktail or coupe glass.
- Garnish with rosemary spring.
