Baked Celeriac (Firinda Kereviz)

This dish is a local favorite in Edirne, Marmara and the Aegean regions during the winter months. Celeriac (celery root) is believed to be one of those cure-all root vegetables, enjoyed stuffed and roasted and served with yogurt when in season.
Ingredients
2 1/2 cups celeriac (celery root)
2/3 cup carrot
1 medium onion
10 garlic cloves
Scant 1/2 cup orange juice
2 tbsp orange zest
2 tbsp lemon juice
1/4 tsp black pepper
1/2 tsp salt
1/4 cup Mature Harvest olive oil
1/2 bunch dill, finely sliced
Steps
Preheat oven to 350 degrees Fahrenheit.
Peel and chop the celeriac (celery root) and carrot into 3/4-inch wedges, then chop the onion into thin wedges.
Combine all the ingredients apart from the dill in a large roasting pan and toss well.
Bake in the hot oven for 40 minutes, stirring every 10 minutes.
Remove from the oven and mix in the dill before serving.
