Baked Celeriac (Firinda Kereviz)

Baked Celeriac (Firinda Kereviz) - Heraclea Food Co
This dish is a local favorite in Edirne, Marmara and the Aegean regions during the winter months. Celeriac (celery root) is believed to be one of those cure-all root vegetables, enjoyed stuffed and roasted and served with yogurt when in season.

Ingredients

  • 2 1/2 cups celeriac (celery root)
  • 2/3 cup carrot
  • 1 medium onion
  • 10 garlic cloves
  • Scant 1/2 cup orange juice
  • 2 tbsp orange zest
  • 2 tbsp lemon juice
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup Mature Harvest olive oil
  • 1/2 bunch dill, finely sliced 

Steps

  1. Preheat oven to 350 degrees Fahrenheit. 
  2. Peel and chop the celeriac (celery root) and carrot into 3/4-inch wedges, then chop the onion into thin wedges.
  3. Combine all the ingredients apart from the dill in a large roasting pan and toss well. 
  4. Bake in the hot oven for 40 minutes, stirring every 10 minutes.
  5. Remove from the oven and mix in the dill before serving.
