Honey Roasted Carrots with Hawaij Masala, Feta & Mint

Hawaij-spiced olive oil roasted carrots on a platter topped with crumbled feta, fresh mint, and toasted pine nuts

We made this one with friends. Diaspora Co.'s Hawaij Masala — turmeric, cumin, cardamom, black pepper — whisked into our Mature Harvest EVOO with honey and garlic, poured over carrots, and roasted hot until the edges go dark and caramelized. Crumbled feta, fresh mint, and toasted pine nuts finish it. A side dish that refuses to act like one — put it next to anything off the grill and watch it get eaten first.

Ingredients:

  • 1½ lb carrots (about 8 large carrots), peeled
  • 1 Tbsp Diaspora Co. Hawaij Masala
  • ¼ cup (60 ml) Heraclea Mature Harvest EVOO
  • 2 Tbsp honey
  • 1 tsp water
  • 2 garlic cloves, finely grated
  • 2 tsp Diamond Crystal kosher salt
  • ½ cup feta cheese, crumbled
  • 2 Tbsp fresh mint, roughly chopped
  • 3 Tbsp pine nuts, lightly toasted

Steps:

  1. Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper.
  2. Trim, peel, and slice the carrots in half lengthwise. If very thick, cut into quarters so they roast evenly.
  3. In a small bowl, whisk together the Hawaij Masala, olive oil, honey, water, grated garlic, and salt until smooth.
  4. Arrange the carrots in a single layer on the prepared baking sheet. Pour the spice mixture over the carrots (one less bowl to get dirty) and toss directly on the sheet until evenly coated.
  5. Roast for 20 to 25 minutes, stirring halfway through, until the carrots are tender and deeply caramelized at the edges.
  6. Transfer to a serving platter and top with crumbled feta, fresh mint, and toasted pine nuts. Serve warm.
